Potassium Sorbate Powder
Potassium Sorbate is a water soluble, process-stable food preservative, forming transparent solutions at neutral pH and at low levels at acidic pH. Potassium Sorbate will not dissolve in the presence of milk for example or in water at low pH. Potassium Sorbate in solution is gradually converted to Sorbic Acid as the pH is lowered below 6.0 and this is much less soluble than the potassium salt. Potassium Sorbate is 75% by weight Sorbic Acid -its active form. Acidification after dilution into a soft drink, can avoid precipitation of Sorbic Acid if its use-level is suitably low - hence maintaining solution transparency.
Acid should be added as a solution to avoid localised precipitation of Sorbic Acid. Increased soluble solids and use in conjunction with other preservatives where permitted (e.g. Sodium Benzoate) can enhance the preservative effect of Potassium Sorbate.
Acidic soft drinks (typically pH 3.0 – 3.5), emulsions, dressings, desserts and trifle jellies.
