Maltodextrin DE 17-20
Water soluble bulking agent with slightly sweet flavour. The powder resists lumping over time. It is process-stable and produces clear solutions at moderate to high inclusion levels. Maltodextrin can improve freeze thaw stability and amend texture in high solids products. Maltodextrin is characterised by its DE figure (dextrose equivalent) – which is a measure of reducing properties and often the relative sweetness of different grades, although the DE figure should not be assumed to be the actual dextrose content. The sugar content of maltodextrin is considerably lower than glucose syrup powder.
